6 6-inch tortillas
2 tsp olive oil
2 garlic cloves minced
1 shallot, finely chopped
1 each red, green & yellow bell pepper, seeded and chopped
Salt and pepper
6 oz goat cheese, crumbled
2 oz shredded low-fat mozzarella cheese
1 tsp chrushed dry oregano
Heat the oil and saute the garlic and shallot for 4-5 minutes.
Add the peppers, salt and pepper and stir-fry for 4-5 minutes.
Put the tortillas on a greased baking sheet. Spread the pepper
mixture on them evenly.
Sprinkle with the cheese and oregano. Bake in a preheated oven
at 400-degF for about 10 minutes.
Cut into quarters and serve immediately.
