* Quick 'n' Easy Salad *


Fusili pasta or shell-shaped pasta
Button mushrooms or oyster mushrooms, sliced
Sun-dried tomatoes
Whole cherry tomatoes
Sliced red, green and yellow peppers
Diced celery
Thinly sliced onions
Canned red kidney beans
Black olives
Garlic paste or marinated garlic
Olive oil
Balsamic vinegar
Salt and pepper
Crumbled feta cheese

Cook the pasta according to directions. Drain and cool.
Saute the mushrooms lightly in olive oil and cool.
Put the pasta, vegetables, beans, olives and garlic in a
large salad bowl and toss well.
At serving time, add the olive oil, vinegar, salt and
pepper and toss together. Top with cheese and serve.
