* Gazpacho * (Cold Tomato Soup)


4 cups canned tomatoes, undrained
1/2 cup tomato juice
3 celery stalks
1 green bell pepper
1 - 2 cucumbers
1/2 cup finely chopped onion
2 minced garlic cloves
1 cup tomato sauce
2 tsp olive oil
1 tbsp apple cider vinegar
Dash of Tabasco sauce
1/2 tsp light brown sugar
Salt and pepper to taste

Chop all the vegetables finely. Mix together all
the ingredients in a large bowl.
Garnish with mint leaves and serve chilled.
